Yummy Nutty Granola

This granola combines nuts, seeds and fruit – a winning combination for great nutrition. The nuts and seeds provide protein, fat, fibre, calcium, zinc, iron, Vitamin E and some B vitamins. The dates are an excellent source of fibre, iron and niacin and give the granola a natural sweetness.

 

This is a great power-packed snack for those busy days or for your kids’ lunch bags.

 

Put the almonds, walnuts, cashews, sunflower seeds, pumpkin seeds, cranberries and dates in food processor and blend until all ingredients are roughly chopped. Place in bowl with other ingredients.

 

Pour wet ingredients into dry and mix until well combined.

 

Place on baking sheet lined with waxed paper and spread evenly.

 

Bake until golden brown. Remove and cool.

 

Ingredients

(Makes about 3 cups )

 

3/4 cup rolled oats

1/4 cup almond slivers

1/4 cup walnuts

1/4 cashews

1/8 cup sunflower seeds

1/4 cup pumpkin seeds

1/8 cup chia seeds

1/3 cup dried cranberries

1/3 dates, roughly chopped

1/3 cup shredded coconut

2 tbsp oil

1 1/2 tbsp agave or any liquid sweetener of choice

1/2 tsp vanilla extract

1/4 tsp cinnamon

 

Directions

 

  • Preheat oven to 275F.

  • In a food processor, blend 1/2 cup oats until almost finely ground. Place in bowl and add chia seeds and shredded coconut.

  • Put the almonds, walnuts, cashews, sunflower seeds, pumpkin seeds, cranberries and dates in food processor and blend until all ingredients are roughly chopped. Place in bowl with other ingredients.

  • In separate bowl, whisk oil, agave, vanilla and cinnamon.

  • Pour wet ingredients into dry and mix until well combined.

  • Place on baking sheet lined with waxed paper and spread evenly.

  • Bake for 20 minutes then remove and stir. Return to oven for another 20 minutes or until golden brown. Remove and cool.

     

 Enjoy on its own, in your yogourt or with milk!

 

 

 Note: If you like your granola a bit stickier, just increase the oil and sweetener amounts equally.
